Strawberry Pistachio Dip (with a Dairy-Free Alternative)

If you are looking for the world’s easiest appetizer for a potluck, this is it. All you need in a tub of Cool Whip, one package of Jello Pistachio Pudding and a container or two of strawberries. My friend Tiffany introduced me to this amazing and incredibly easy appetizer and I cannot count the number of times I’ve made it. Not only does it take all of five minutes to whip together (pun intended) but it’s also a crowd-pleaser every time. The only problem is my  poor dairy-allergic husband can’t enjoy it. 

When I found a recipe online for coconut whipped cream I decided to give it a try. Although way more labor intensive than the Cool Whip version, the flavor and consistency was excellent and now he can enjoy this delicious appetizer as well. Both recipes are below if you want to give them a try. You will not regret it!

Strawberry Pistachio Dip (Original)

Ingredients

  • Cool Whip
  • JELLO Pistachio Pudding Mix
  • Strawberries

Directions

  • Mix Cool Whip and Pistachio Pudding together.
  • Remove the green tops from the strawberries.
  • Serve & enjoy!

 

Strawberry Pistachio Pudding (Dairy-free) 

Ingredients

  • 1 14 oz can of coconut milk
  • 2 TB of powdered sugar
  • 1 box JELLO instant Pistachio Pudding Mix
  • Strawberries

Directions

  • Refrigerate can of coconut milk, 8 hours or overnight.
  • Place metal mixing bowl and beaters in the refrigerator or freezer 1 hour before making whipped cream.
  • Open can of coconut milk, taking care not to shake it. Scoop coconut cream solids into cold mixing bowl. Discard the remaining liquid or reserve for another use.
  • Beat coconut cream using electric mixer with chilled beaters on medium speed; turn to high speed. Beat until stiff peaks form, 7 to 8 minutes. HINT: Don’t get frustrated if it seems more “runny” than you’d like. Once you mix in the pistachio pudding it will thicken up.
  • Add sugar and beat 1 minute more.
  • Add 1/2-3/4 of the contents of Pistachio Pudding and mix well. Taste and add more as needed.
  • Remove the green tops from the strawberries.
  • Serve & enjoy!
