Mango Salsa

Our neighbors have a mango tree and after fifteen years of no mangos, it has decided to fulfill its destiny. This summer they have been the proud pickers of an abundance of delectable fruit and as their neighbors, we have also reaped the harvest.

After eating a mango (or two) a day for the last few weeks I decided to branch out and make mango salsa to share. A year or so ago my best friend and I made this recipe which she found online and I resurrected it today. If you happen to have a mango, this is a very refreshing and delicious treat!

Mango Salsa

Ingredients

  • 1 mango, peeled & diced
  • 1/2 cup of cucumber, peeled & diced (about 1/4 of a cucumber)
  • 1 jalapeño, finely chopped
  • 1/3 cup of red onion, diced (about 1/4 of an onion)
  • 1 TB lime juice
  • 1/3 cup of cilantro leaves, roughly chopped
  • salt and pepper to taste

Directions

Combine all ingredients in a bowl and mix well. Serve with chips and enjoy!
